These are very tasty – and no-bake! They are especially nice because of the chocolate bits and the condensed milk. Pretty sure they aren’t healthy though.

Healthy Energy Bites

They taste great and are NO-BAKE! I's nice to cook with CondensedMilk, such an underrated ingredient!

Equipment

  • 1 Baking tray We used a baking tray for little cakes, I was determined not to hand shape them – it's too messy!!

Ingredients

  • 135 grams rolled oats
  • 125 grams natural peanut butter or almond butter
  • 40 grams shredded coconut unsweetened
  • 120 milliliters condensed milk
  • 5 milliliters vanilla extract
  • 85 grams dark chocolate chips
  • 30-45 grams chia seeds or flaxseeds
  • 1/8 teaspoon salt

Instructions

  • In a large mixing bowl, combine rolled oats, peanut butter, shredded coconut, condensed milk, vanilla extract, and a pinch of salt. Mix well until all ingredients are thoroughly combined.
  • If using, add in the chocolate chips and chia seeds/flaxseeds and mix until evenly distributed throughout the mixture.
  • Take about a tablespoon of the mixture and roll it into a ball using your hands. Repeat until all the mixture is used, forming bite-sized energy balls.
  • Place the energy bites on a baking sheet lined with parchment paper and refrigerate for at least 30-60 minutes to allow them to firm up.
  • Once set, the energy bites are ready to eat! Store any leftovers in an airtight container in the refrigerator for up to a week.
