I make this with my home made Kimchi. It’s very tasty and quick to make. It can be served with crusty bread as a filling lunch or evening meal.

Simple Kimchi Pasta

Equipment

  • 1 Large Pan
  • 1 Frying Pan

Ingredients

  • 225 g pasta of your choice spaghetti, linguine, or penne work well
  • 240 ml kimchi chopped
  • 1 large onion thinly sliced
  • 3 cloves garlic minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 Grated Parmesan cheese for serving to taste
  • Chopped green onions for garnish
  • 3 rashes Bacon (optional)

Instructions

  • Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving a little bit of pasta water.
  • Heat olive oil in a frying pan over medium heat. Add the sliced onions and cook until they start to soften, about 5-7 minutes.
  • Add minced garlic and bacon (optional) to the frying pan and sauté for another 2 or t3 minutes until fragrant.
  • Stir in the kimchi and cook for 3-4 minutes, allowing the flavors to meld together.
  • Add the cooked pasta to the frying pan. Toss everything together until the pasta is well coated with the kimchi mixture. If it seems too dry, add some pasta water. Make sure the pasta doesn’t dry while cooking.
  • Season with salt and pepper to taste.
  • Serve the pasta hot, garnished with grated Parmesan cheese and chopped green onions if desired.

Notes

The bacon is optional but quite a tasty addition. This is very cheep. I personally like to use pasta that is not wheat based as it is a little easier on my digestion (last time I made this with red lentil and beetroot pasta).
