Equipment
1 Baking tray We used a baking tray for little cakes, I was determined not to hand shape them - it's too messy!!
Ingredients
135gramsrolled oats
125gramsnatural peanut butteror almond butter
40gramsshredded coconutunsweetened
120milliliterscondensed milk
5millilitersvanilla extract
85gramsdark chocolate chips
30-45gramschia seeds or flaxseeds
1/8 teaspoon salt
Instructions
In a large mixing bowl, combine rolled oats, peanut butter, shredded coconut, condensed milk, vanilla extract, and a pinch of salt. Mix well until all ingredients are thoroughly combined.
If using, add in the chocolate chips and chia seeds/flaxseeds and mix until evenly distributed throughout the mixture.
Take about a tablespoon of the mixture and roll it into a ball using your hands. Repeat until all the mixture is used, forming bite-sized energy balls.
Place the energy bites on a baking sheet lined with parchment paper and refrigerate for at least 30-60 minutes to allow them to firm up.
Once set, the energy bites are ready to eat! Store any leftovers in an airtight container in the refrigerator for up to a week.
